Remember growing up and while at meal times, Mom always said eat your vegetables they are good for you? Moreover, how many of you did not like your vegetables? Well…Mom was right again! Vegetables are good for you. They are healthy and offer many nutritional benefits. The darker the vegetable color, the more nutrients that can be obtained for human consumption and the healthy effects for the body. Heirloom vegetables are sometimes referred to as Heritage vegetables. These vegetables are coming back into fashion for people are demanding more flavor. Usually, the small, local farms will produce these over the the large farms because they do not transport well. Besides eating vegetables, if you are the type of person who does not like to eat them, there is the option of drinking your vegetables. Having a cup of fresh vegetable juice in the morning is a better pick me up than having a cup of coffee and living on a caffeine high which will cause you to continue consuming caffeine laden products through out the day to keep on going. The health benefits of vegetables is they aid in helping to prevent various types of cancer, they can delay or decrease the symptoms of aging and more importantly allowing a person to enjoy life by eating and living healthy. A person usually feels more energy and less fatigue by eating or drinking their vegetables. Vegetables are loaded with vitamins, minerals, enzymes, and micronutrients. Cooking vegetables also can lead to better iron absorption in humans compared to just eating vegetables raw. It is recommended that a person consume 50% of vegetables raw and the other 50% of vegetables cooked. This offers a balance of achieving the optimum health benefits of vitamins, minerals, micronutrients offered by vegetables. Eating vegetables may also reduce the risk of stroke and cardiovascular disease. It can also aid in lowering the risk of type 2 diabetes. It may also help reduce the risk of kidney stones and bone loss. Eating a vegetable or vegetables will always provide nutrients vital for health and the continued maintenance of your body. Enjoy healthy eating, it leads to a longer life, and your body will thank you for it.
