Omelletes are famous day starters. Can be prepared in a rush on few strokes and it should be sitting heavy in the stomach. Ben and Maria make good campervan recipes including Omelletes. So whether you are in a caravan park or somewhere between trees, get your mini kitchen working on some goody breakfast. A motorhome hire is best if you are expecting a budget vacation. What you need are: 2 large free-range eggs, 5 thick slices of cheese, 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, & tablespoon of extra virgin olive oil. Beat the eggs with the salt and pepper in the mix. Add one tablespoon of extra virgin olive oil to a non-stick frying pan and let it become really hot. Add the eggs. Move the pan and lift the borders of the omelette so that the egg mix can fill all the gaps and gets cooked. When there is still raw egg on the surface of the omelette, add the slices of cheese in the middle of it. Let it melt a bit for half a minute or so. With a palette, wrap the two borders of the omelette on top of the cheese in the middle. Let it stay on the heat for another half a minute and then serve. Plan your next holiday with a campervan, look for shady park sites and unfold those medium sized table & chairs under shade, or right next to the lake, or wherever that makes an episode more relaxed. A budget bed and breakfast accommodation only comes second.
