Making Scandinavian recipes becomes afun family event.” Denise’s favorite recipe for fresh potato lefse makes about20 large rounds. Here is the recipe: 5 cups of peeled and cooked mashed or riced potatoes 1 cup of half and half cream ½ cup of butter 1 tsp. Salt 3 c. flour 2 tbsp. Sugar Mash or rice boiled potatoes. Measure. Add butter, cream,sugar, and salt. Beat until smooth. Let stand until cold (or refrigerate in alightly covered bowl). Add flour when ready to bake (and not before). Make thedough into 1/4 cup dough balls and refrigerate in a cake pan. Removing onedough ball at a time from the refrigerator, roll thin using as little flour aspossible. Use a cloth-covered board and cloth-covered corrugated rolling pin toroll out the dough balls. Bake on a hot lefse griddle at about 450 degrees. Usea lefse stick to turn the lefse when you see it bubble and have light brownspots on the back. Cool under a lefse cozy or damp towels. Freeze aftercooling.
