When you are on the hunt for commercial kitchen equipment, your first job will be to collect a bunch of useful knives. Now, you can get a readymade commercial set of knives for a price from many stores. However, for a truly personal experience, you would want to select the knives depending on what you are going to be making.
Types of knives
Before you buy knives, you need to know what kinds of knives are available in the market and what purpose they serve.
1. The Chef’s knife: This is probably the most visible knife in any kitchen. It is characterized by an unusually broad blade and is about 10 inches long. Most chef’s like to pose with this knife in hand. When you are buying the chef’s knife, be sure to check that the blade extends along the entire length of the knife. This will give you greater balance while you are cutting.
2. Bread knife: You always want a separate knife for cutting your bread. When it comes to cutting, bread is unlike other food items. You need something really sharp and serrated to make smooth slices that don’t create a mess. Hence, the specialized bread knife.
3. Boning knife: If you are heavily into cooking meat, especially poultry and red meat, you should have a bunch of boning knives handy. They are specially made, so that you can easily pick out the bones safely, while leaving the meat in proper shape. They are anywhere between 4 to 7 inches in length.
4. Paring knife: This knife is best used for cutting vegetables, fruits or other such things. You can afford to buy paring knives that are slightly inexpensive, because they are used to cut very soft eatables. You will usually find only one of these in a set of commercial kitchen equipment, buy you can have more if you need.
5. General knives: other than the above mentioned knives, you can buy a bunch of utility knives for times when none of the speciality knives you buy will suit your job. It is not uncommon to have about half a dozen of these knives in your set, just in case.
You may need some or all of the above mentioned knives for your job. If you don’t do a lot of meat, for example, you won’t need boning knives, but you do want all of the others.
